HORCHATA FLAN WITH CHERRY SAUCE AND CRISPY TILE WITH POPPY SEEDS

Ingredients

Ingredients of the flan

 

  •       500 gr. of horchata
  •       5 eggs
  •       60 gr. of sugar


Ingredients of cherry sauce

  •       70 gr. of glucose or honey
  •       100 gr. of sugar glass
  •       150 gr. of boneless cherries
  •       120 ml. of water


Ingredients of poppy tile

  •       2 "Filo" pastry sheets 
  •       Melted butter
  •       Poppy seeds
  •       Sugar

Preparation

Making custards

Put the horchata to the fire, when it begins to boil threw the hot horchata to the mixture of eggs and sugar, without stopping to remove.
Spill the mixture in molds with caramel and bake in a water bath at 160 C degrees.

Preparation of cherry sauce

Warm up in a saucepan the glucose or the honey with the glazed sugar, without stopping to remove. Crush the cherries, and add 100 gr. of cherry pulp to the sugar. Then add the rest of the pulp and water. Remove until the sauce is homogenous. Store in the refrigerator and use when it is cold.

Making the tiles

Roll out the sheets of "Filo" pastry and paint with melted butter. Cut into triangles and sprinkle with sugar and poppy seeds. Put them on baking paper and bake at 180 C degrees for 8 minutes.

Presentation

Place the flan in a bowl over the tile poppy and draw a string of cherry sauce.
