2nd Edition of the day "Crea Orxata 09", the fusion of Horchata an Tigernut from Valencia with haute cuisine
Three Michelin stars will experiment on 30 September with the potential of Chufa and Horchata from Valencia in the restoration. Opened the registration period.

September 14, 2009 .- The CdT of Valencia will host on September 30 for the second consecutive year, the celebration of the day gastronomic cuisine "Create Orxata 09" driven by the regulatory body of the DO Valencia Chufa to enhance the endless possibilities offered by the Horchata and Valencia Chufa exceptional ingredients.
In this new edition, "Crea Orxata 09" will participate three Michelin star chefs from restaurants Riff, Vertical and Alejandro del Toro to experiment with the potential of both products, genuinely valencian, in the author kitchen.
Bernd Knöller, the Riff, Jorge Breton, La Sucursal and Vertical, and Alejandro del Toro, chief of the restaurant of the same name, will be responsible for leading this culinary journey that will take place on Sept. 30 at the CdT Valencia. A quotation addressed to professionals of the gastronomy, which also will feature the Kitchen Area of Science and Department of Food Technology of the Polytechnic University of Valencia.
In its second year, "Create Orxata 09" has managed to arouse the interest of our country's top chefs in some products until recently operated in the kitchen and have many healthy properties. In fact, this conference organized by the D.O. Chufa of Valencia, in collaboration with the CdT of Valencia and the Conselleria of Agriculture, Fisheries and Food has made in the last year have multiplied the presence of proposals based Chufa Horchata and Valencia in the menus of restaurants.
"Crea Orxata 09" is part of the initiatives developed by the Regulatory Council of the DO Chufa of Valencia to get the entry into the kitchen from Chufa and Horchata from Valencia. Moreover, the Regulatory Council has included in its web www.chufadevalencia.org a section of recipes with Horchata and Chufa from Valencia and has created a blog, "Nova Orxata" dedicated specifically to the spread of homemade dishes together by the Denomination of Origin: www.novaorxata.blogspot.com.
The Denomination of Origin Chufa of Valencia stands in the certificate of product quality and the Council D.O. Chufa from Valencia is the agency responsible for it. The main objective of this D.O. is to ensure the provenance of Valencia and the highest quality of some products such as highly healthy and Chufa and Horchata from Valencia, supported by numerous medical studies.
