FRIED HORCHATA

Ingredients

- For 4 people:

 
  •      ½ l of Horchata of tigernut from València 
  •      4 eggs
  •      Flour for coating
  •      40 grams of refined corn flour
  •      75 g of sugar
  •      2 g of agar agar
  •      Olive oil
  •      ½ vanilla bean
  •      2 tablespoons of ground cinnamon

Preparation

  • Heat the horchata with the vanilla and wait until it boils.
  • Separate yolks and whites of 3 eggs. Put the eggs in a bowl. Add the sugar, cornmeal and the agar agar and mix well. Pour the hot beverage and stir constantly. Strain, put back into the saucepan and cook until it thickens. Boil for 5 minutes and stir constantly. Put the mixture in a dish in the refrigerator.
  • Mix the 3 egg yolks with the other egg and beat it.
  • Remove the horchata from the mold and chop it. Coat the pieces in egg and flour and fry in a pan with hot oil. Drain on absorbent paper.
  • Place a tablespoon of sugar and cinnamon in the tray to serve. Put the fried horchata on it with the remaining sugar and cinnamon.
