  • La Sucursal (Jorge Breton)
 
La Sucursal born in 1995 and has a Michelin star. This restaurant reflects the tradition of a family devoted to gastronomy. The tradition began with Loles Leon and now continues with her sons Javier Andrés and Cristina. Nowadays Jorge Breton is responsible for its cuisine. Jorge blends market cuisine with sophisticated touches of nouvelle cuisine to create countless dishes inspired by tradition.

  •  Arrop (Ricard Camarena)

This restaurant is the dream of Camarena and his partner Maria Carmen Bañuels. They work together to fusion the traditional valencian cuisine with experimental cuisine. The results are signature dishes with which the chef has achieved, early than four years, a Michelin star and the recognition as  "Best Chef of the Valencian Community" or "Best New Restaurant 2006" at Madrid Fusion.

  •  Oscar Torrijos (Oscar Torrijos)
 
This restaurant is the new bet of one of the great chefs of Valencia, who achieved a Michelin star with his previous restaurant and who maintains its interest  to increase the value of the authentic cuisine of Valencia. Oscar Torrijos creates wonderful dishes that highlight the homeland ingredients, such as vegetables and rice.
  •   Department of Food Technology (Purification Garcia)

Purificación García (Degree in Biology and Ph.D. in Food Technology from the Polytechnic University of Valencia), is currently a researcher at the Institute of Food Engineering for Development, where she works in the Area of Science and Technology Culinary, Catering and Community Nutrition. She is membership of the National Network inquiries (Research, Innovation and Development Applied to Food).
