VALENCIAN CREAM

Ingredients


* 350 ml of Horchata of Tigernut from Valencia
* 40 grams of refined maize meal
* 2 tablespoons of sugar for caramel
* Rind of 1 lemon
* Rind of 1 orange
* 2 mint leaves for garnish

Preparation

To make the cream, pour in a pan two glasses of horchata and heat up. Clean lemon and orange and grate it over the casserole.

Add the maize flour, the remaining horchata and mix it. Add this mixture to the saucepan and mix everything with the aid of a rod until it thickens.

Distribute the cream into two molds. Wrap the plastic bowls with film paper to avoid vapor and drips. Enter in the refrigerator and let cool for a few minutes.
