GELATIN OF HORCHATA OF TIGERNUT FROM VALENCIA AND CARDAMOM

Ingredients

  • 650 ml. of Horchata of Tigernut from Valencia
  • 25 grains of cardamom
  • 1 envelope of neutral gelatin or, alternatively, 6 sheets of neutral gelatin
  • A few mint leaves
  • A pinch of sugar
  • A hint of vanilla

Preparation

  • Make an infusion with 250 ml of Horchata of Tigernut from Valencia, cardamom and mint.
  • If gelatin sheets are used, put them in a container with water and a couple of ice cubes to be hydrated.
  • Once the infusion is done, take the grains of cardamom and mint from the infusioin and add the gelatin (or hydrated slides), and while it is melting, add the rest of the horchata, sugar and vanilla.
  • When everything is well mixed, put the mixture into the mold and put it in the fridge about two or three hours, until it curdles. Keep in the fridge.
